Here we have an easy to make Thai curry recipe for you to try, Panang Curry with Chicken..

Panang Gai 

Ingredients:    

(for 2 servings)         

  • 500g chicken fillets                  
  • 50g Panang curry paste         
  • 2 tbsp vegetable oil
  • 2 cups coconut milk 
  • 1 tbsp fish sauce
  • 1 tbsp sugar 
  • 5 kaffir lime leaves, coarsely ripped
  • 3 red chillies, julienned
  • 1/2 tbsp kaffir lime leaves, julienned

Panang Curry with Chicken 

    Preparation:

  1. Cut chicken fillets into thin, long slices.
  2. In the pan, heat vegetable oil until hot on medium to low heat, add Panang curry paste and stir fry until aromatic.
  3. Add 3/4 cup of coconut milk and stir fry on low heat until the coconut milk breaks down.
  4. Put the chicken in and add coarsely ripped kaffir lime leaves.  Season with fish sauce and pour the rest of the coconut milk into the pan.  Simmer on low heat until the chicken softens and the curry thickens.
  5. Transfer onto a serving bowl or plate and garnish with julienned red chillies and julienned kaffir lime leaves.
