Here we have an easy to make Thai curry recipe for you to try, Massaman Curry with Chicken..
Ingredients: (for 2-3 servings) - 500g chicken
- 1-2 tbsp Massaman curry paste
- 1 cup coconut milk or coconut cream
- 5 potatoes, peeled and cut into chunk
- 1-2 carrots, peeled and cut into chunk
- 1 onion, sliced into big pieces
- 1/4 cup peanuts
- 1/2 tbsp salt
- 5 tbsp tamarind puree
- 4 tbsp palm sugar
- 3 tbsp cooking oil
| Massaman Curry with Chicken
Preparation: - Boil the potatoes and carrots until soft, then leave them aside.
- Heat the oil in a wok or a pot on low heat, then put in the Massaman curry paste. Stir-fry until aromatic. (1-2 minutes)
- Then gradually add in the coconut milk or coconut cream, stir till it brings out some oil.
- Increase the heat to medium, then add in the chicken. When the chicken is cooked, season the curry with tamarind puree, palm sugar and salt.
- Add the potatoes and carrots that have been boiled before together with the onion and peanuts.
- Simmer the curry over low heat until the chicken is tender.
